Healthy Spiced Apple Crumble

Gluten, Sugar & Dairy Free-adaptable, Serves four. 

Ingredients

 For the crumble: 
  • 5 Granny Smith apples
  • 1 cup of Almond Meal
  • 1/3 cup Desiccated Coconut
  • 1/3 cup Almonds, chopped
  • 1/3 cup Pecans, chopped
  • ½ tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Cardamom
  • 1 tsp Vanilla Extract
  • 40g Unsalted Butter or Extra Virgin Coconut Oil, melted.

       To serve:
      • Double Cream or Mascarpone Cream or Whipped Coconut Cream.

        Method

        • Get prepping: Preheat oven to 170c fan forced. Peel, core, and cut Apples into chunks and put into baking dish. Place in oven for 20 mins to pre-cook the apples.
        • Mix it up: Meanwhile, mix all dry ingredients: Almond Meal, Desiccated Coconut, Chopped Almonds, Chopped Pecans, Salt, Cinnamon and Cardamom, together in bowl. Melt Butter (or Extra Virgin Coconut Oil to make it vegan) in pan or microwave, add Vanilla to Butter/Oil and pour over the dry ingredients. Mix with spoon.
        • Bake it up: Remove the Apples from oven, sprinkle over crumble mixture and place back in oven for 20-25 minutes until the top is golden brown.
        • Serve and sip: Serve spoonsful of Healthy Spiced Apple Crumble in a comforting bowl with a dollop of Double Cream or Mascarpone Cream or make it vegan with whipped coconut cream. Pour yourself a steaming cup of Adaptogens Calm Mind and relax into a nourishing end to your day. Pyjamas also highly recommended.
